I always like to do something a little bit “unorthodox” for holidays – especially when it comes to food. Of course, I also like to have a theme! Here I’ll share the menu for my “Russian Easter” dinner with recipes found both on Martha Stewart and Epicurious websites.

Menu

Salmon Coulibiacs with Sour Cream-Dill Sauce
Herb-Stuffed Leg of Lamb
Roasted Kielbasa with Mustard and Horseradish
Kulich (Russian Easter Bread)
Watercress Salad with Pickled Eggs
Asparagus with Mustardy Vinaigrette
Baby Carrots with Spring Onions
Potato and Pea Pierogi
Paskha
Lemon-Coconut Cakes
Imperial Stout
Red Wine

While I was preparing the food I enjoyed a peep cocktail (or two).

I can’t find the original recipe I used but here’s a similar one: http://www.geniuskitchen.com/recipe/easter-peep-martini-cocktail-476715.

For the most part, the food turned out fabulous, considering I had never made (or heard of) most of the recipes. One thing I wanted to mention, was that for the Paskha, I did end up using a flower pot since I didn’t have a mold. But you can find one on Amazon, here:

Also, I was so focused on the Menu that I neglected to put thought into the table setting. If I had to do it all over – maybe I will! – I will update with pictures and ideas.

Thanks for looking!
